Functions
Run Jiu sheng can decompose the cell walls and intercellular fibers of grains and tubers, thereby releasing starch and converting it into fermentable sugars. At the same time, it can reduce the viscosity of powder pulp, cooking mash and saccharifying mash, this ensures the smooth implementation of the high mash process. It can also cooperate with amylase to accelerate the starch liquefaction process and save the amount of saccharifying enzyme.
