Enzymes are a kind of catalytic substances produced by living cells in living organisms, which can accelerate the rate of chemical reactions and convert reactions to a certain order. Therefore, enzymes are biological catalysts. Protease function: the general name of a class of enzymes that hydrolyze protein peptide bonds. According to the way of hydrolyzing polypeptide, it can be divided into two categories: endopeptidase and exopeptidase. Endopeptidase cuts off the protein molecules internally to form a small molecular weight peptone. Exopeptidase hydrolyzes peptide bonds one by one from the end of free amino or carboxyl groups of protein molecules, and liberates amino acids. The former is aminopeptidase and the latter is carboxyl peptidase. According to its active center and optimum pH value, proteases can also be divided into serine protease, mercapto protease, metalloproteinase and aspartic protease. According to the optimum pH value of the reaction, it can be divided into acid protease, neutral protease and alkaline protease. The protease used in industrial production is mainly endopeptidase.
